St Martin is a mild, slightly crumbly cheese, with an appearance, taste and texture very similar to traditional Wensleydale cheeses. Its name is a reference to a patron saint of the poor, whose feast day Martinmas, the day on which the cheese was produced for the first time in 2020, is traditionally celebrated in Botton.
Like all Botton cheeses, this cheese is made with the raw milk of the village's dairy heard and with vegetarian rennet.
